Who doesn’t love Maple Syrup on their pancakes, waffles and French toast? We can’t get enough of it in our house! February and March are the perfect months to enjoy local Maple Syrup tapping events in Connecticut. Why not learn more about this breakfast favorite? According to the Maple Syrup Producers Association of CT, maple syrup tapping season begins in early February and lasts through the end of March. Freezing temps at night and warmer sunny days are necessary for the maple tree to produce sap. The sap is then collected and then through a boiling process the syrup is formed.
