We always somehow seem to end up with an abundance of apples in our house. It doesn’t even matter what time of year – it’s just that we always have way too many apples. One of my absolute favorite things to make is this recipe which was shared years ago with my mom by one of her good friends. My mom in turn shared it with me & my sister. Literally, every single time I make it and bring it somewhere, I’m asked to share the recipe! I mean years ago, one of my friends & her husband got in an argument over the last piece.
Just trust me on this – make it and take it to where ever you’re headed for holiday parties this year. Your host will really appreciate it (and you) the day after their party..
Nana Joey’s Apple Bread
Yields 2 Breads
Ingredients:
3 Eggs, beaten
2 cups sugar
1 cup oil
1 Tablespoon vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
4 cups peeled & chopped apples (roughly 4 apples)
Topping:
2 Tablespoons Sugar
1/2 Teaspoon Cinnamon

Tin Loaf Pans
Step 1: In a large bowl, stir together eggs, sugar, oil and vanilla
Step 2: Add flour, soda and cinnamon; stir until just blended
Step 3: Cut apples into tiny cubes. Then stir in apples
Step 4: Pour into 2 greased and floured loaf pans
Step 5: Add the topping by combining the sugar and cinnamon and sprinkling it over batter
Step 6: Bake in a preheated 350* oven for one hour and 10 minutes or until tester comes out clean
